[[underline]] Ginger Wine [[/underline]] Put 12 [[addition]] lb [[/addition]] of sugar to 10 Gall.s of water and the whites of six eggs well beaten stir them together & when near boiling skin it well Bruise half a p.d of white ginger & put it into the Liquor when boiling let it boil twenty minutes. pour the boiling Liquor on the rinds of ten Lemons thinly pared when cold put it into a Cask with two spoonfuls of good yeast. Take off the whites of the Lemons pared each, cut into slices the Lemons. taking out all the seeds. put the slices into the Liquor with half an ounce of Isinglass you need not stir it. Close it up the next day it will be ready to Bottle in a fortnight - put one raisin into each bottle - 204
