[[underline]] To Make Hams [[/underline]] One pound of bay salt, half a pound of common salt, two ounces of saltpeter, one Ounce of black peper, beat all this together in a marble morter then rub your hams well with it, let them lay four days, turning them & rubing them well every day - then put a pound & a half of treacle on them let them lay one mounth, then put them into water for 24 hours & afterwards hang them up to dry - to have them in perfection they should be cured before Christmass
